πŸ‡ΈπŸ‡Έ Independence Day (South Sudan) πŸ‡ΈπŸ‡Έ

Today marks the five year anniversary of the Republic of South Sudan’s independence from Sudan in 2011!

And here’s an interesting tidbit I dug up; if some surveys are to be belived, South Sudan would be the largest nation to have the majority of the population practicing indigenous religious beliefs.

Now, on to the south Sudanese national dish: Foul  Medames!

A popular breakfast dish in Egypt and Sudan, it’s basically fava beans cooked with tahini, lemon juice, garlic and olive oil. Often topped with an egg and served with pita bread.

Full disclosure, I couldn’t get my hands on Fava beans anywhere, so I used black beans (I’m sorry South Sudan!)
